Tofu Creamed Spinach

Ingredients
Butter, salted, 1 tbspOnions, raw, .5 smallGarlic, 1 cloveSpinach, fresh, 1.6 package (10 oz) (1 lb)Tofu, firm, 0.5 blockMilk, 1%, .5 cupParmesan Cheese, grated, 0.25 cupgarlic powder, salt and pepper to taste
Directions
Heat butter in a large skillet over medium heat.


Stir in onion and garlic; cook until soft and translucent, but not brown. Add spinach; cook, stirring frequently, until wilted.


Place tofu, milk, cheese, garlic powder, salt, and pepper in a blender, and puree until smooth.


Stir pureed tofu into spinach. Cook until warmed through. Adjust seasonings, if desired, and serve.
