No Time Home Made Chicken Broth

Ingredients
Chicken bones (from roast is best but fresh is okay too. Turkey can be used as well)1 Onion (if you leave the peel on it will give the soup and dark colour)1 Carrot1 Celery stickgarlic cloves, wholepepper cornsthymesaltrosemary
Directions
Put all ingredients into the crock pot, fill with water and cook high 2 hrs, low 4 hrs. (A bouquet garni can be made with the spices - put spices into a cheese cloth and close like a bag). Let cool and put cheese cloth into strainer then strain soup into containers. The fat can then be skimmed off after it cools completely. I make this, then put the soup into different sized containers, freeze and then it is ready for use. I even put some into ice cubes for salad dressings, etc.

    Very good...I make my stock this way...sometimes add extra garlic, a bit of sage and bacon for a deeper "layered" flavor. You can discard the bacon and skim off the fat, so it doesn't increase the calorie level significantly. - 12/2/08

    I did this with the leftover turkey carcass. I let it cook on low all night. It turned out great! Made for an easier clean-up, too. I plan to seal the frozen stock in Food Savers to save room in my freezer. - 12/2/08
