Salad • 2 cucumbers• saltMarinade • 1/4 cups of white vinegar• 1 tablespoon of sugar
1. Wash cucumbers. Peel a few strips off or score with fork, really well.
2. Slice as thin as possible. Sprinkle salt all over - but don’t over do the salt. Just enough to remove water. Stir and let sit for 15-30 minutes in fridge.
3. Mush with clean hands. Take handfuls of cucumber slices and squeeze as much water out as possible. Continue squeezing all of the cucumber slices.
4. Stir together the white vinegar and sugar, until sugar dissolves. Taste, add more sugar if needed. Pour over drained cucumber.
5. Stir thoroughly. Let sit for 15 minutes before serving.
