Turkey, Black Bean & Beer Chili

2 T. extra-virgin olive oil1 med. onion, chopped1 small bell pepper, chopped3 cloves garlic, minced4 t. chili powder (can reduce amt for less spicy chili)2 t. dried oregano1 t. ground cumin1/2 t. salt1/2 t. black pepper1 1/2 lb lean ground turkey breast4 c. chopped fresh plum tomatoes or canned tomatoes with juice (I use low or no sodium)3 c. cooked black beans (rinsed and drained)1 bottle (12 oz) light beer (I used Bud Lite since this is what I had on hand)1 can of water additional - used empty bean can to measure
In large skilled over medium heat, warm the oil. Add onion and peppers, garlic and all spices. Cover and cook, stir occasionally, for about 10 min until veggies are softened.
Crumble turkey into skillet, cook until no longer pink. Add tomatoes, beans and beer. Bring to a boil, reduce heat and bring to a simmer. Cover and simmer for 1 hour, stir occasionally to prevent sticking. Cook as long as desired. Using canned beans this was ready within a little over an hour.
