Ingredients
1 cup and a half cooked & mashed pumpkins1 cup whole wheat flour2 cups white flour2 tsp salt1 tsp baking powder1 cup milk approx (preferably half fat)1/3 cup shortening (vegetal if you want to keep the recipe vegetarian)1 cup frying oil (canola or soybean)
Directions
Mash the pumpkin if needed, very finely.
Warm the shortening in the microwave so that it's well melted but not too hot to work it.
Put all the flour but 1/3 cup of white flour on a surface, gather it in crown or volcano shape.
Pour in the middle the shortening, pumpkin puree and some milk along with the salt and baking powder.
Start kneading until the dough is well integrated, add milk if necessary and flour if it feels too sticky; the dough should be a bit elastic but not stick on the surface.
Sprinkle some of the leftover flour on the surface and on a roll (or bottle if you don't have one) and start stretching the dough until it's less than a half cm thick.
Pinch the dough lightly all over with a fork.
Use a mug or a round shaper to cut rounds of dough.
Warm the oil in a pan at high fire for 5 mns, then switch to low fire and start frying. About a minute on each side is enough to cook them. Adjust the cooking time if needed after the first batch, enjoy!
