Low Fat Mac & Cheese

12 oz. lean ground turkey1 C. chopped onion3 cloves garlice, diced1 stalk celery, diced1/2 C. green pepper, diced2 C. no fat milk1 C. low fat cheddar cheese, shredded2 tbsp flour1 tsp Wendy's mustard1 tsp paprika1 tsp black pepper1 tbsp parsley
Cook pasta in a large pot of boiling water. In the meantime saute onion until starting to soften, then add green peppers, celery and garlic. Saute for a few minutes, and remove from pan. Brown the ground turkey and remove trying to remove as much fat as possible.
When the pasta is finished, drain, rinse with cold water and place in a large mixing bowl. Add the cooked vegetables and meat.
In a seperate pot heat milk to almost boiling. Mix the other ingredients togetherand slowly add to the milk, stirring to fully incorporate. Cook this until starting to thicken and add to caserole dish.
Bake in a 350F oven for 45 min. Let set for a few minutes before serving.
