Ingredients
bone-in beef (approx 1.5 lbs)1/2 head of cabbage4 medium potatoes1 small onion1 medium beet1 large carrot3 medium tomatoes1 bell pepper
Directions
Fill a large pot with water to within an inch of the top and add beef. Bring to boil, add two tablespoons of salt, lower the heat to "low" and let simmer for 90 minutes.
Remove the meat from the broth and allow to cool on a separate plate, add the cabbage, pepper and potatoes, finely sliced, to the broth and bring to low boil.
Chop the onion and carrot into thin slices and fry in a little oil until the onions are translucent add the beet, also finely sliced and tomatoes, chopped. Add 1/2 cup broth and allow to stew, covered, for about 5 minutes. Add back to pot.
De-bone and section meat into bite size pieces and add to pot.
Bring to boil, add salt & pepper to taste.
Add two laurel leaves and turn off the stove.
