Raspberry Chicken Spinach Salad

Ingredients
1 large breast of chicken, no skin, cut into 4 fillets3 cups of fresh spinach 4 TBS balsamic or red wine vinegar3 TBS extra virgin olive oil4 TBS Smuckers Raspberry or Grape jelly1/2 cup of Kraft Fat-Free Shredded Cheddar Cheese2 TBS Hormel reduced-fat real bacon bits
Directions
In a medium fry pan, heat 1/2 tablespoon of olive oil on medium high. Add 4 chicken filets to the pan. Cook until crispy on both sides. Add the bacon to crisp. In the meantime, prepare the salad dressing by mixing the remaining amount of olive oil, the vinegar, and the jelly in a small mixing bowl. Mix well with a small whisk. Put 1 1/2 cup of the spinach in each salad bowl. Pour half of the dressing in each bowl. Top with hot chicken and bacon. Sprinkle 1/4 cup of cheese on top of the chicken in each bowl. Enjoy!!!

    I liked it, but it wasn't anything too special. The second time I tried it, I did it without the cheese and bacon bits, and added craisins and sunflower seeds. That salad was more my style. - 3/15/07
