George's Famous Soup, Reduced Fat

1/4 cup unsalted butter1 cup peeled, diced broccoli stems2 cups broccoli florets1/2 cup each chopped carrot, onion, celery2 teaspoons dried thyme2 teaspoons dried oregano1 teaspoon dried basil1/4 cup dry white wine4 cups chicken stock1 lb can black beans, drained8 ounces smoked turkey, diced1 tablespoon Worcestershire sauce1/2 teaspoon hot pepper sauce (tabsaco)3/4 cup heavy cream1 1/4 cup fat free half and half2 tbsp cornstarch mixed with 2 tbsp water
In a large heavy saucepan melt the butter over medium heat. Add the broccoli stems, carrot, onion, celery & saute 5 mins. Add thyme, oregano, and basil and cook another couple minutes. Add the wine & bring to a boil. Add the stock and cook until it is reduced by half, stirring occasionally, approximately 15 minutes. Add broccoli florets, black beans, turkey, Worcestershire and hot pepper sauce to the soup and simmer 5 minutes stirring occasionally. Add cream, and fat free half and half and simmer 5 minutes. Taste and adjust seasoning, add salt & pepper as neccessary. Add cornstarch-water mix and cook briefly until thickens. Serves 6.
I usually serve with french bread.
