Grilled Eggplant with Basil & Feta

• 3 tablespoons lemon juice• 1 tablespoon olive oil• dash black pepper• 1 large eggplant sliced in discs of 1/4-inch thickeness• 1 large tomato, sliced• 1/4 cup feta cheese, crumbled• 1 tablespoon basil
1. Preheat barbecue to medium and grease grill.
2. Whisk together lemon juice, oil, salt and pepper. Lightly brush eggplant slices with lemon mixture and barbecue about 3 minutes. Brush eggplant slices with remaining lemon mixture, then turn and continue to barbecue until tender, about 3 to 5 more minutes.
2. Lay eggplant slices on tray and randomly tuck in tomato slices. Sprinkle with cheese and basil.
