Peanut Butter Oatmeal Chocolate Chip Cookies

1 cup all-purpose flour1 cup old-fashioned or quick cooking oats1/2 tsp baking soda1/2 tsp baking powder1/4 tsp salt1/2 cup (1 stick) butter, softened1/2 cup granulated sugar1/2 cup firmly packed brown sugar1/2 cup peanut butter1 egg1 1/2 tsp vanilla1 cup semi-sweet chocolate chips
We made 14 cookies.
Preheat oven to 375 degrees. In a mixing bowl combine flour, oats, baking powder and salt; set aside. In another bowl, place butter, sugars and peanut butter. With an electric mixer on medium speed, beat peanut butter mixture until light and fluffy. Add egg and vanilla; mix well. Gradually add flour mixture, mixing until well blended after each addition. Stir in chocolate chips. Drop heaping tablespoons onto parchment-lined baking sheets, 2 inches apart. Bake 10-12 minutes or until lightly browned. Cool 1 minute; remove from baking sheets to wire racks, allow to completely cool.

Although it isn't super healthy, I was impressed with the flavor and fiber in these cookies. They are not diet cookies, but if you portion them well ( I got over 30 small cookies) you could save yourself the calories and still get a great snack that matches your nutritional goals. This recipe is wonderful! I made these cookies without issue.I believe SPARKTIMBRA may have missed a' rising' ingredient (baking soda or powder). I first assemble all my ingredients. I have also used a 'non hydrogenated' butter flavored margarine in place of butter which will flatten the cookies. - 3/25/09

Just made these and for some reason they didn't turn out right at all! The flatened out like pancakes and had a weird fluff to them. I wouldn't follow this recipe again. Something isn't right. - 3/21/09

My 12 year old makes these about 1x/week with no problems, and she is quite the chocolate chip cookie fan so I checked to see if I made any errors entering the recipe. I've listed as an ingredient both baking soda & baking powder but in the directions left one of them off, maybe try again?
