Tofu Chili

Ingredients
3 Tbsp vegetable oil28 oz furm tofu, crumbled1 onion, diced1 green pepper, diced3 garlic cloves, minced1 cup mushrooms, sliced3 Tbsp chili powdersalt & pepper for taste1/4 tsp cayenne pepper1/2 tsp cumin14 oz can tomato soup28 oz can whole or diced tomatoes, with liquid28 oz can kidney beans, drained3 tsp sugar
Directions
1. In a large pot, saute the tofu in the vegetable oil over medium heat for 5-10 minutes.
2. Cook onions, green peppers, garlic, mushrooms, chili poweder, salt & pepper, cayenne, and cumin ina separate pot.
3.Cook until veggies are just barely tender, about 5 minutes.
4. Add the tomato sauce, tomatoes, beans, & sugar.
5. Add tofu to veggies and tomato sauce.
6. Bring to a slow simmer.
7. Cover & allow to cook for at least 45 minutes.
8. Serve & Enjoy!
