Fall Cream of Vegtable Soup

2 cups Broccoli2cups Cauliflower1 tab. chopped onion2 carrotscelery 1 strip1 tab Italian seasoning 1 tab. Smart Balance1 cup. Milk 1%2 tea. corn starch1 can chicken stock4oz low fat cheddar cheese optional
Chop vegtables into bite size peaces. Melt smart balance in large pot, saute onions till starting to get tender, add celary and carrots saute for 10 minutes on low heat. Add broccoli, cauliflower & chicken broth, salt and pepper to taste. Add Italian seasoning, or fresh herbs of your choice. Bring to a boil, turn down to simmer, and cook till tender. Add cornstarch to milk. Bring soup back up to boil and and milk mixture string constantly. Cook ten more minutes, add cheese if desired and serve.
