Vegetable Quiche Cups

Ingredients
1 pkg (10 oz) frozen chopped spinach1 cup liquid egg substitute3/4 cup shredded reduced-fat cheese1/4 cup chopped green peppers (or any color)1/4 cup finely chopped onionsSaltPepper
Directions
Thaw spinach and drain out all liquid. Spray 12-cup muffin tins with cooking spray. Mix egg substitute, cheese, peppers, onions, and spinach in a bowl. Mix well and add salt and pepper to taste. Fill muffin tins evenly with mixture. Bake at 350 degrees for 20 minutes until knife inserted in center comes out clean.

Quiche cups can be frozen and reheated in microwave. Also - any combination of veggies and reduced-fat cheeses may be used.

Serves 6. One serving is 2 quiche cups.

    Great idea, but way too much spinach. I'll try it again and substitute some grated potato & carrot for 1/2 of the spinach. - 3/2/09
