Ritzy Chicken nuggets

2 lbs. chicken tenders1c nonfat milk (buttermilk can be used if you have it, omit vinegar)1 tbl. vinegar1 1/2 sleeve ritz crackers
Mix milk & vinegar together and let sit for a few mins. Add tenders to milk and let sit up to 2 days.
Preheat oven to 425.Crush ritz crackers into crumbs. Shake off the excess milk and dredge in crumbs. Place on parchment lined baking sheet. Bake 15-20 mins, flipping halfway
To fry them instead, heat 1/2 cup of oil in a large skillet. Cook for 2 mins on each side. Drain on paper towels.
*Feel free to add seasoning. These are good, but rather plain as is. I add a little hot sauce to the marinade, and some garlic powder, pepper and oregano to the crumb mixture. Also, ritz makes a vegetable cracker which would be good too.
*May contain less calories than calculated, because you many not use all of the cracker crumbs and the milk is discarded after marinating. Calories calculated for baked, not fried version.
