Kitchen Sink Coleslaw

Ingredients
5 C. finely chopped cabbage (red and green makes a pretty mix)2 large carrots, shredded1 C. chopped roasted red pepper1/3 C. sliced green olives1/2 C. raisins (not packed)Dressing1/2 pkg. Mori-nu lite silken tofu (or 6 oz. of silken tofu, any brand)2 Tbs. olive oil1 Tbs. apple cider vinegar4 tsp. dijon mustard1 Tbs. maple syrup1 Tbs. lemon juice1/4 tsp. salt
Directions
Mix together salad ingredients in a large bowl.

In blender, combine dressing ingredients and blend until smooth and creamy.

Add dressing to salad and combine well. Serve chilled.
