Pesto Veggie Wrap

1 cup yellow squash, sliced1 cup red bell peppers, sliced1 cup green peppers, sliced1 cup yellow peppers, sliced1 cup zucchini, sliced1 cup onion, sliced1 Tbsp olive oil1 cup cucumbers sliced 1/4 cup light Miracle Whip3 cups fresh spinach2 Tbsp grated parmesan cheese1 clove garlic5 LaTortilla Factory Low Carb Tortillas
Toss first six ingredients with 1 Tbsp olive oil. Bake in preheated 450 deg oven for 15 mins. For pesto, blend miracle whip (or lite mayo), fresh spinach, parmesan cheese & garlic in blender or food processor. Spread 2 Tbsp pesto on each tortilla, divide roasted veggies among tortillas, top each with fresh cucumber, wrap & enjoy!
* Can substitute veggies, flour wraps, or pita of choice (will alter nutritional values)
** Also great topped w/ fresh chopped tomato
