Easy Fried Rice

2/3 c. brown rice, uncooked1 1/2 c. Chicken Broth (low-sodium)1 bag frozen veggies, I used the 'Edamamae asian blend'1 egg1 clove of garlic, minced3 tbsp low sodium soy sauce1 tbsp rice vinegar1 tsp corn starch
Bring the rice and chicken broth to a boil, cook for recommended length of time on package.
Mix together in a small bowl the soy sauce, vinegar, and corn starch.
After the rice is finished, heat a wok or frying pan to medium heat, add the oil, the vegetables, and the garlic. Saute for a minute or so. Add in the rice and the sauce mixture and cook for another minute. Make a well in the middle and add the egg, stir the egg and once it is mostly cooked, incorporate it into the rice.
