Pumpkin Sunbutter Banana Oatmeal Muffins

2 cups pumpkin, mashed/pureed1 large banana, mashed3/4 cup egg whites1 1/3 cups powdered milk4 tsp pumpkin spice1/2 c sugar3/4 c wheat flour1/2 c oatmeal (I used old fashioned)3/4 cups raisins or cranberries (they have the same amount of calories)1/4 cup sunbutter (My daughter is allergic to peanut butter, so you can substitute, if you wish)2 tsp baking soda2 tsp vanilla
Mix all wet ingredients (including pumpkin and banana).
Add peanut or sunbutter.
Mix in powdered milk.
Add oatmeal.
Add flour and soda.
Add raisins.
Bake in muffin tins for 20-30 minutes. Makes 16 muffins.

Quite nice, not bland at all with changes. I used 5 tsp p.pie spice, 3 whole eggs, extra Tbsp p.butter. Egg whites tend to make things bland and rubbery, egg yolks bring warmth of flavor and stability...and better nutrition. I substituted 1/4 C sugar with Lakanto (erythritol blend) - 10/16/10

Oven temperature was not included. I baked mine at 350 degrees. The taste is good, a little bland. I used 2 whole eggs, added 2 scoops of protein powder and some chopped walnuts, substituted Splenda for the sugar and made them a little smaller, getting 19 from the recipe. Thanks AubreyJo! - 11/9/09
