Quick and Easy Creamy Mushroom Chicken

Ingredients
1.5 pounds boneless, skinless chicken breast or tenderloins, diced2 cups low-sodium chicken broth2 small cans Campbell's Healthy Request Cream of Mushroom Soup (or Cream of Chicken Soup)3 oz Neufchatel (low fat) cream cheese4 tbsp fresh, snipped chives (can use dry also)1 cup canned mushrooms, drained
Directions
In large non-stick, high side skillet, add 2 cups broth and diced chicken breast. Bring to a boil over high heat, then turn heat down to med-high and continue cooking chicken, stirring occasionally, for about 30 minutes until no longer pink inside and tender. Add cream of mushroom soup, chives, mushrooms, and Neufchatel cream cheese and stir well until cream cheese is melted and all ingredients are incorporated well and mixture is hot, about 5-10 minutes. Serve as is or over noodles/rice. Makes about 6 servings, equally divided.

    This was super - I added some extra ingredients: parsley, garlic powder, dijon mustard and sage to the broth. Then I sauteed muchrooms and onions added them. When the chicken was nearly done, I added some broccoli as well. My five-year old and my picky husband inhaled it! Thanks! - 12/17/08

    Sounds like some great additions! I didn't have onions or garlic the day I made this, so next time I will use them!

    My husband and I loved this recipe. I went ahead and added the suggestions of garlic powder, onions, sage, parsley,mushrooms and I used yellow mustard. Did not have the Dijon Mustard. It was very very good. Served it over some rice. Will make again!!! - 1/22/09

    Made this for supper tonight served over noodles. My husband, son and I absolutely loved it. Compared it to stroganoff without all the fat. Will definitely have it again - maybe next time substituting venison for the chicken. - 1/30/09

    I saute' the chicken first in a little bit of olive oil, diced garlic and onions. It helps to make the chicken more flavorable. - 5/13/09

    This wasn't my favorite meal, but it wasn't bad and it was really easy to make. Next time though I'd do it with extra lean ground beef. The chicken just didn't add enough flavor. - 1/19/09

    My mom made a similar dish, but she would cook everything separately. My dad, brother, and I would mix it all up on our plates, so she started serving it this way.     Loved this! Added an extra can of mushrooms as I LOVE mushrooms, & also added a 1/2 of an onion, a little bit of garlic powder, dried parsley, & pepper. Served over rice (would recommend using 2 c. rice, 1 c. wasn't enough). 1.5 lbs = ~4.5 chicken breasts, FYI. Makes a lot! - 2/16/09

    Good and easy! I made this using tofu instead of chicken and vegetable broth instead of the chicken broth. I served it over some bread, open-face sandwich style. - 12/17/08

    Not a bad dinner. I think it needs onions and garlic though. I add a bit of mustard (2 Tbsp) to the soup to punch it up. - 12/15/08

    Thank you for the nice comment about my recipe! You can actually vary this a bit for a change and use Healthy Request Cream of Chicken Soup and cooked broccoli cuts instead of the mushroom soup and mushrooms. My family loves it both ways! Blessings!

    I am glad your 4 yr old liked this! It is rather tasty if I say so myself...LOL! Vary it a bit...use cream of chicken soup and broccoli, or cream of celery soup and carrots next time. Really, the combinations are up to your own taste buds as long as you stick to the basic recipe! Blessings!

    I really liked this recipe, thanks for sharing! I did look at the other comments & made a few little changes. I used fresh mushrooms, about 2 cups worth-I love mushrooms! I sauteed them with 1/2 onion & some minced garlic before adding to the mixture. I'll definitely make again. - 3/8/10
