Home Made Whole Wheat Bread

Ingredients
Starter / Sponge4 tsp active dry yeast¾ cup warm water1 cup whole wheat flourDough2 cups whole wheat flour½ cup dry milk½ cup vital wheat gluten1 tbsp salt1/3 cup sugar¼ cup oil2 cups warm water2-4 cups whole wheat flour (amount varies)
Directions
Recipe Makes 2 standard 5” x 9” loaves

Directions:
1) Combine sponge ingredients in a bowl. Cover with plastic wrap and let sit for 45 minutes in a warm place.
2) Add next 7 ingredients for dough and mix until combined.
3) Add remaining 2-4 cups flour ½ to 1 cup at a time until dough is a little sticky and a little stiff.
4) Knead 20 minutes by mixer.
5) Transfer to bowl, coat with oil, and cover with plastic wrap and towel.
6) Let rise in warm place for 45-60 minutes.
7) Divide dough into two equal parts and shape into loaves.
8) Place into bread pans seam side down.
9) Let rise 30-60 minutes.

Bake at 375 degrees for 15 minutes, then lower and bake at 350 degrees for 20 more minutes.
