Brownies (with spinach and carrot)

Ingredients
Non stick cooking spray3 oz. semisweet or bittersweet chocolate1/2 cup carrot puree1/2 cup spinach puree1/2 cup firmly packed brown sugar1/4 cup unsweetened cocoa powder2 Tbsp trans-fat-free soft tub margarine srpead2 tsp pure vanilla extract2 large egg whites3/4 cup oat flour, all-purpose flour1/2 tsp baking powder1/2 tsp salt
Directions
Preheat oven to 350 degrees. Coat an 8x8-inch baking pan with cooking spray.

Melt the chocolate in a double boiler or over a very low flame.

In a large bowl, combine the melted chocolate, vegetable purees, sugar, cocoa powder, margarine, and vanilla, and whisk until smooth and creamy, 1 to 2 minutes.

Whisk in egg whites. Stir in flour, baking powder, and salt with a wooden spoon.

Pour batter into the pan and bake 35 to 40 minutes. Cool completely in pan before cutting into 12 bars.

    I had no idea what to expect but we were all pleasantly surprised. Even the kids loved these! My 13 year old said they are better than regular brownies. I will definitely be making these again and again. I used the blender to thoroughly mix the dry ingredients into the batter. - 8/2/09

    Needed a little sweetness, so I put chocolate chips on top while warm. Delightful! Also, I use butter not margarine. - 6/18/11

    It was so soft and chewy. I let my really picky daughter eat all of her brownie before I told her what was in it. She loved it and is excited about all the healthy stuff that in it. - 8/29/10
