2 - 28 oz cans diced tomatoes3 - 14.5 oz cans beans drained and rinsed ( I use 1 kidney, 1 pinto, and 1 black)1/4 c or 1 packet taco seasoning2 - fresh or frozen chicken breastsi - can corn drainedgarnish with cheddar cheese and sour creamand have tortilla chips ready for dipping
Add the tomatoes, beans, and seasoning to the crock pot. Stir. Them add the chicken breasts. Cook on low for 6-8 hrs. HIgh for 4-5 hours. Add the drained corn 20 minutes before serving. This serves 6 big portions or 8 with a few child size servings.
