Homemade Fruit & Gelatine Cups

1 can of Del Monte Fruit Cocktail in light syrup, drained.1 box (4 envelopes, or 4 tbsp) gelatin (I used Knox brand)1/2 cup honey1 64oz bottle of 100% fruit juice with no added sugar (I chose Welch's Black Cherry & Grape juice with only 100% fruit sugars)
Measure out 2 cups of juice, pour into large bowl, open and pour all gelatine packets into that bowl as well to soften while you heat up the juice.
Measure out 4 cups of juice and the honey, place in small pot on stove and heat to boiling. Be careful not to scorch.
Equally divide the drained fruit cocktail into your serving containers. I picked the Glad ware Mini Round tight sealing containers. This recipe makes around 24 of them.
Take hot fruit juice off the stove, pour into the juice/gelatin mix in the big bowl. Stir carefully, do not whisk. Those bubbles that whisking makes do not go away. After all the gelatin is dissolved, add remaining juice.
Divide the completely mixed gelatine/juice/honey mixture into the containers with the fruit in them. Cap them carefully (if you overfill the container then putting the lids on will make them overflow) and place in the refrigerator to set.
Eat and enjoy :-)
