chicken salad craisins pecans

Ingredients
1 Rotisserie chicken breast chopped1/4 cup olive oil mayonnaise (or light)1/3 cup craisins chopped1/3 cup roasted chopped pecans1 ounce lemon juicesalt and pepper to taste
Directions
Put pecans in toaster oven at 300 degrees for about 3-4 minutes. Keep an eye on them as they will burn easily. Chop the breast of any already cooked rotisserie chicken and put in bowl. Add mayo, lemon juice, chopped craisins, pecans, salt and pepper to taste. Mix and serve over bed of mixed greens. I also make this in large amounts for parties and serve with toast points or something for scooping. It is delicious.
