Black Eye Peas Salad

Ingredients
2 tbsp Fresh Lime Juice1/4 c chopped red onion1/2 tsp ground cumin1 tbsp hot sauce (Frank' s Red Hot or Tobasco)1 stalk celery2 roasted red peppers (finely chopped)1/4 c cilantro (finely chopped)2 (15-ounce) cans of black-eyed peas, drained2 tbsp extra light olive oil2 tsp fresh grated gingersalt and pepper to taste
Directions
In a large bowl combine all ingredients and season with salt and pepper (salt and pepper very important). Toss and serve.
