Chicken Tostada with Corn, Jalapenos and Black Beans

Ingredients
- 4 tostadas- 4 cups shredded lettuce - 2 5oz chicken breasts cooked and diced- 1 tomato, diced - 1/2 cup frozen corn kernels, thawed - 1/2 can black beans, rinsed and drained - 1/4 cup diced pickled jalapenos - Chopped fresh cilantro leaves, to garnish For Cilantro-Lime Vinaigrette:- 1/3 cup chicken broth - 1 tablespoon extra virgin olive oil - 2 teaspoons honey mustard - 2 tablespoons fresh lime juice -2 tablespoons fresh cilantro leaves, finely chopped
Directions
Transfer tortillas to individual plates and top with lettuce, chicken, tomatoes, corn, black beans, and jalapenos. Sprinkle cilantro over top to garnish, if desired. Set aside.

To prepare Cilantro-Lime Vinaigrette:
In a container or jar, place chicken broth, olive oil, honey mustard, lime juiceand cilantro. Cover with lid. Shake to combine. To serve, drizzle over Chicken Tostada.

    Love this recipe. I use corn tortillas that are baked. Add some lime zest to the sauce as well - 1/6/14
