Ingredients
6 cups (48 ounces) cubed turkey breast6 cups fresh snap green beans, ends removed and cut in thirds4 cups chopped green cabbage, stems removed2 cups onion, chopped3 cups diced potatoes, skin on6 cups vegetable broth2 cloves garlic, diced10 small sprigs fresh parsley1 large bay leaf1 tbsp black pepper
Directions
Pour broth into slow-cooker. Add black pepper, garlic, parsley, and bay leaf. Add turkey to broth in slow cooker first, then add remaining ingredients. Cover and cook on high setting for 6 hours. Remove bay leaf and serve. Note: It may not look like there is enough broth in the "stew" at first, but condensation that occurs during cooking will make more broth.
**At the end of the cooking cycle, you may thicken the "stew" if desired by taking a cup or so of the broth and adding a few tablespoons of cornstarch, mixing well, and then re-adding it to the slow cooker and stirring to incorporate.**

I would add broccoli, cauliflower, mushrooms, carrots for a thicker, fuller stew loaded with veggies - 12/4/20
