Ingredients
4 boneless skinless chicken thighs1 cup cut into slices yellow pepper1 cup cut into slices red pepper1 cup cut into slices green pepper1 cup cut into slices onion1 cup cut into slices mushroom1/4 cup green olives.5 cup sofrito 4 cups chicken broth2 cups rice
Directions
Place chicken broth in a pot to boil for 30 minutes. remove chicken cut into pieces. Remove broth, measure 4 cups, put back into pot bring to a boil. Add all veggies, sofrito, chicken and rice. Bring back to boil, reduce heat to low and simmer 20 minutes.
