Vegan Graham Crackers

Ingredients
1.)1 1/2 c. whole wheat flour2.) 5 packets Truvia*3.)1/2 tsp. baking soda4.)1/2 tsp. salt.5.)1/2 tsp. cinnamon6.)1/4 c. unsweetned applesauce7.)2 tbsp. agave nectar/molasses8.)1 tsp. vanilla extract9.)1/4 c. soymilk**Topping(optional):1.)1 tbsp. raw sugar2.) 1/4 tsp. cinnamon*Truvia is a more commercial form of stevia, and you can substitue any kind. Or, if you don't have access to it, you can substitute 1/3 c. raw sugar.**Can substitue rice, nut, oat, or hemp milk, as well as water.
Directions
Pre-heat oven to 350 degrees

1.)Mix ingredients 1-5 together in a large bowl, making a well in the center.
2.) Pour ingredients 6-8 in the well and whisk with a fork.
3.) Keep mixing until crumbs are formed.
4.) Drizzle in soymilk and mix with a fork until a pliable ball is formed. Adding an extra tablespoon of milk if needed.
5.) Knead the dough a couple times until it is a ball.
6.) Sprinkle a work surface with flour and roll out the dough into a rectangle that is 1/8 inch thick. (Don't make it much thicker because that will make the cooking time longer)
7.)Cut edges to make an even rectangle and cut into about 2-4 inch long rectangles. (Or whatever size or shape you want.)
8. Score the crackers with a fork three times in a row on three sections of the cracker.
9.) Spay a cookie sheet with non-stick cooking spray and place the crackers on it.
10.) Sprinkle cinnamon sugar on top and bake for 12-14 minutes, or until they have the desired consistency.

    I made these last night and they were DEEEELicious. I subbed oat flour and oat bran for 1 cup of the flour. There is no oil in the recipe so they were a bit chewy. I left them in the oven over night (with the oven off) and they were perfectly crispy this morning. Making more today! - 10/23/10
