Potato Pancakes

Ingredients
5 medium potatoes (740g)1 small onion1 egg1/4 cup flour1 tsp salt1/4 tsp pepper2 Tbsp oil (for frying)
Directions
place potatoes (cut in quarters), onion, egg, flour, salt and pepper in the blender to grate.

Heat a cast iron frying pan. add 1 Tbsp oil. Fry up half the potato mix. If possible use 2 frying pans, that way all pancakes will be ready at the same time.

Serve with butter, molasses or apple sauce.

makes 8 pancakes.
