Wild Rice Soup

Ingredients
9 slices of bacon cooked and cut up1 medium onion - diced2 1/2 cups of wild rice - cooked (1 cup uncooked)2 pints of Half and Half cream2 cans of cream of potato soup2 cups grated cheddar cheese3 tablespoonsCould use lower fat ingredients to reduce calories and fat.
Directions
Wash wild rice and cook 1 cup of wild rice and put in 2 quart casserole dish with 3 cups of water. Microwave on high power for 5 minutes and then for 35 minutes on ½ power (I use high power for this part too). After done let sit for 15 minutes this will equal your 2 ½ cups of cooked rice. Makes 10-12 servings (1-1/2 cup serving).

While this is sitting – simmer the diced onion in 3 tablespoons of butter until tender – then add ½ and ½ , cream of potato soup, rice, bacon and cheese. Cook until hot on medium heat.
