Finnish Turnip Caserole

1 medium sized turnip, diced1 whole egg2 Tbsp egg white1 Tbsp Margarine1/2 C Evaporated non-fat milk1/2 C. bread crumbs, plain1 tbsp nutmeg, ground1 tbsp brown sugar
Peal, dice and cook turnip with the nutmeg until soften. Take off heat and drain, leaving the turnip in the pot. Mix the egg, egg white, milk, and sugar. Mash the turnip, add the margarine and the egg mixture mixing at the same time. Add the bread crumbs and stir until well blended. Place in a caserole dish and bake 45 min in a 350F oven. If you plan to make this ahead, it is necessary to bake the caserole before freezing because of the whole egg. Tip: I heat the thawed caserole in the oven after I pull the turkey out.
