Coconut Kisses

Ingredients
3 egg whites1/8 teaspoon salt1/4 teaspoon vanilla1 cup splenda or sugar1 1/2 cups flaked coconut
Directions
Preheat oven to 325°F. Line cookie sheets with parchment paper.

In small bowl, beat egg whites with salt and vanilla until soft peaks form. Gradually add sugar, about 1 tablespoon at a time, beating on high speed until stiff peaks form. Fold in coconut.

Drop by rounded teaspoon onto prepared cookie sheets. Bake about 20 minutes. Transfer cookies to wire rack and let cool.

Makes about 2 dozen.

    Wow, these are very good. I was craving chocolate and coconut. I made these with splenda. I added 1 1/2 unsweetened coco powder for a true desert. The only thing was my kisses were stuck to the paper. I kept this in my favorites. I give it a 5 star rating. - 2/14/11
