Yellow Split Pea & Ham Soup

Ingredients
Yellow Split Peas, dry, one package (about 2 cups)Reduced sodium chicken broth, 2 cans or about 4 cups (feel free to substitute water and boullion) Ham, lean, 2 cups in a 1cm dicePotato, 1 small, peeled and dicedCelery, 1/2 cup dicedOnion, 1/2 cup diced1 Bay LeafBlack Pepper to taste
Directions
Rinse and sort split peas, making sure no stones or dirt are present.

Saute onions and celery in a large soup pot or dutch oven, about 5 minutes or until onions are clear.

Add broth and split peas. If broth does not cover, add some water. Bring to a gentle boil and add the rest of the ingredients.

Simmer for about an hour, checking frequently to make sure there is enough liquid. Use water or more broth if the soup appears too dry.

Resist any impulse to add salt! The ham will make the soup very salty; make sure you use reduced or low sodium broth or boullion.

Makes 8 1 cup servings.

Feel free to substitute other vegetables or whatever you have on hand: carrots, green beans, or cauliflower could all add variety and texture.

    To me this is a great comfort food when I need something nutritious and warm. I added carrots to mine. - 3/11/08
