Ingredients
1/4 Cup low fat miracle whip1/4 Cup low fat Sour Cream1/4 cup cliantro, chopped1 tsp grated lime zest (peel)Juice from 1/2 lime1 lime, halved1/2 tsp ground cumin1/4 tsp ground red pepper4 portions cooked chicken breast1 can black beans1 can corn
Directions
In an large mixing bowl, combine mayonaise, sour cream, cilantro, lime zest, lime juice, cumin, ground red pepper. Stir in chicken, corn, and black beans.

Serve over Bibb lettuce leaves.

    This recipe is nearly identical as that from 'Eating for Life'. It is very good but lacks the red pepper and red onion found in the original. Add those and it's even better. The dressing including the cilantro and lime are what make it for me. Delicious. - 8/18/12
