Spicy Szechuan Tofu Stirfry

put about 1/2 to 1 Tbs. of oil in a med-hot pan and add tofu until firm and golden brown. Add some of the Szechuan Sauce to the tofu and cook another minute or so. Take the pan off the heat and put a wok or other large frying pan on the bruner and add a bit of oil and minced garlic and sliced onions. Season with salt and pepper. Cut veggies and add 2 types at a time (start with the most firm) to the pan and continue sprinkling a bit of oil and seasoning with salt and pepper and spray with a bit of cooking spray so you dont have to use too much oil to get a nice browning out of the veggies. When all the veggies are added and have been stir fried for a couple minutes, add the tofu to the pan and cover everything with sauce and cook for about a minute or 2 and serve over rice.
