Foolproof Buttermilk Pie

Granulated Sugar, 1.5 cup Egg, fresh, 4 large Lemon juice, 1 tbsp Buttermilk, lowfat, 1 cup Flour, white, 1 tbsp.Butter, unsalted, 6 tbsp, melted2 Pie crusts, 9", thawed, ready-to-bake
Preheat oven to 350 degreesF.
In a large mixing bowl combine the sugar, flour and lemon juice, whisk in the eggs one at a time. Stir in the buttermilk and melted butter. Divide the mixture between the two pie shells and bake in oven for 25 minutes, turn down the temperature to 300 F and bake for another 30 minutes.
Remove from oven and cool at room temperature. Slice into individual servings and serve with whipping cream and mint (optional).

The flavor was good, but it was very thin and only about a third of a pie. If I might have done something wrong, please let me know. - 7/23/10

We like to have the two pies, but if you'd like, put the filling in one pie shell and bake it a little longer, it should come out just right.
