L.R. sweet potato cranberry casserole

3-1/2 lbs sweet potatoes4 cups coarsely chopped onions1 tsp. oil1 tsp. sugarSprinkle salt3 cups cranberries, halved1/2 cup orange juice concentrate1 T. butter, melted1/2 tsp. orange extract3/4 tsp. salt3/4 tsp. cinnamon3/4 tsp. ginger3/4 tsp. nutmeg
Bake sweet potatoes at 400 until barely done. They should still be firm, about 40-60 minutes depending on the size of the potatoes. Cool completely. I like to refrigerate them overnight. Place oil in a large skillet over high heat. When hot, add onions, 1 tsp. sugar and sprinkle of salt. Stir-fry continually until onions are browned and limp. Cube sweet potatoes. Add onion and cranberries. In another bowl, combine remaining ingredients. Pour over sweet potato mixture and mix well. Pour into a greased 9"x13" baking pan and bake at 350 uncovered for about 45 minutes stirring once or twice. makes about 13.5 cups.
