Ingredients
4 cup fresh Spinach leaves1 cup sliced Mushrooms1/2 cup plain nonfat Yogurt1 1/2 tsp Olive Oil1/4 cup chopped fresh Basil, Parsley or Cilantro leaves 2 tsp chopped fresh Chives, 1 oz Lemon Juice1/4 tsp Salt1 clove Garlic
Directions
Toss spinach & mushrooms in serving bowl. Blend the remaining ingredients to make dressing. Toss together before serving.

    Actually very good. The dressing was quite bland by itself, but good with the spinach and all other vegetables I added (we had 7!). - 4/14/09
