Spicy Red Lentil Soup

Ingredients
1 Medium Onion. chopped2 Garlic Cloves, crushed1 Small Knob of Fresh Ginger, gratedCumin seeds, coriander, and turmeric to taste1-2 T. Extra Virgin Olive Oil4 Cups Water/Broth1 Cup Red Lentils
Directions
1) Heat olive oil, chopped onion, crushed garlic, grated ginger & spices-cumin seeds, coriander, turmeric on stove top. Add 4 c. water/broth to pan.
2) Place 1 c. red lentils in separate bowl. Cover w/water. Spoon lentils into soup pan w/slotted spoon to remove dirt/stones.
3) Cook about 45 minutes.
4) Yum!
