Vegetable Lo Mein

1/2 lb. spaghetti1 T. Olive Oil1 medium onion, sliced1 cup carrots, chopped1 medium zucchini, sliced1 cup sliced mushrooms2 cups broccoli, chopped1 large green Pepper, cut into strips2 stalks celery, sliced3 cups bok choy, shredded2 T. soy sauce1 tsp. ground ginger 2 cloves garlic, minced
Coat a wok or large nonstick skillet with 1 T. olive oil. Mix 1 T. cornstarch with a little water and set aside. Toss vegetables in to pan and stir fry until tender crisp. Add garlic, soy sauce and ginger - cook 2 minutes. Add cornstarch mixture and stir until thickened. Drain noodles, add to vegetable mixture and toss. Add more soy sauce (to taste) before serving.
