White Chocolate Chunk Cookies (double recipe)

3/4 cup sugar3/4 cup splenda1 1/2 cup firmly packed splenda brown sugar blend2 cup shortening3 eggs3/4 cup egg beaters2 tsp vanilla5 cups all-purpose flour2 tsp baking powder2 tsp baking soda1 tsp salt2 cup coconut1 cup rolled oats1 cup chopped walnuts24 oz. white chocolate baking bars, cut into ¼ to ½ inch chunks
Heat oven to 350F. In large bowl, combine sugar, splenda, brown sugar and shortening; beat until light and fluffy. Add eggs/egg beaters 1 at a time, beating well after each addition. Add vanilla; blend well. Add flour, baking powder, baking soda and salt; mix well. Stir in all remaining ingredients. Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.
Bake at 350F for 10 to 15 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets.
Makes 10 dozen cookies.
