Teriyaki Turkey Mini Meatloaves

Ingredients
20 oz. - Extra Lean Ground Turkey (or Chicken)1 Cup Grated Raw Carrots1 Cup Chopped Scallions1/2 Cup Cooked Spinach (well drained all water squeezed out)3/4 Cup Low Sodium Soy Sauce (I use gluten free for my hubby)2 Cloves Garlic (mashed with garlic press)1 Cup Quick Cooking Oats (Quaker)3 Tbsp. (or 9 tsp.) Brown Sugar unpacked1 Tbsp. Honey1 Tsp. Sesame Oil1 Tsp. Black Pepper1 Tsp. Garlic PowderMuffin/Cupcake tin (that makes 12)Ice Cream ScoopCooking Spray
Directions
1. Whisk together in a bowl soy sauce, garlic, pepper, garlic powder, brown sugar, sesame oil, scallions and honey.

2. Reserve 6-8 tbsp of above mixture for glaze.

2. Combine together (with spoon or hands) in a large bowl the ground turkey, spinach, carrots, and oatmeal.

3. Add the soy sauce mixture into the ground turkey mixture and stir (with spoon or hands) until well combined.

4. Spray Muffin tin with cooking spray and use the ice cream scoop to make the perfect amount of meatloaf for each.

5. Smash each of the Mini Loves down a bit then brush the reserved Soy sauce mixture on top of each Mini Loaf.

6. Bake at 350 for 20-25 minutes (depending on your oven).

* I usually serve this with some steamed asian vegetables and brown rice. Hope you all enjoy!

    Quaker oats are not gluten-free, FYI. Bob's Red Mill GF Rolled Oats are though - 5/26/09

    My husband has a gluten sensitivity and regular "Quaker" oats don't bother him but thanks for the input... you could also use corn chips as a filler if you like or nothing at all. Adjust according to your own allergy/preference.
