Supreme Spinach Salad

Ingredients
4 cups Spinach, fresh2 cups Mushrooms, fresh, cut into 1/4 in. cubes, or sliced as you prefer1/2 cup Craisins (sweetened, dried cranberries)1/4 cup Almonds, sliced1 cup Sweet Red Pepper, chopped1/2 cup Feta Cheese, crumbled8 Tbsp Newman's Own Lighten Up Light Balsamic Vinaigrette Dressing
Directions
Rinse spinach and pat dry. Remove stems if preferred (I don't, it takes too much time). Add spinach to a large salad bowl. Chop the mushrooms and peppers and add to the salad bowl. Add in all of the remaining ingredients and toss thoroughly.

If you're looking to turn this into a meal, you might add a torn up slice of low sodium ham or a cup of cubed, grilled chicken (not included in nutritional facts).

    Everyone loved it! It was a hit at my church function. I think I like the Kens salad dressing over the others for the vinaigrette. I also tried the raspberry walnut vinagrette, which everyone liked as well. I might try blue cheese instead of feta next time, with pecans. - 11/19/12

    I made this for my mom and dad when they came for dinner and it was a hit! I had to substitute the fresh spinach with Mediterranean mix because I couldn't find fresh spinach - but it was still yummy! Highly recommended!!! - 11/9/09
