Black Bean Floutas

Ingredients
(2) 15 1/2 oz cans of black beans, undrained (or use about 4 cups of soaked black beans)2 tsp chili powder1/2 tsp ground cumin1 clove garlic, minced1 bay leaf12 small flour tortillas6 scallions, minced2 tomatoes, chopped1 cup grated cheddar cheeseSalsa or sour cream for garnish (not included in calorie count)
Directions
In a med. sauceban, combine beans, bean liquid, chili powder, cumin, garlic, and bay leaf. Simmer over medium-low heat for 5 minutes. Remove bay leaf. Drain bean mixture, reserving liquid. Mash beans, adding liquid as needed to reach thick puree.

Place 1-2 heaping tablespoons of bean mixture in center of each tortilla, spread out, and top with scallions, tomatoes, and cheese. Roll up in tube shape and place in a 9x13 inch pan, seams down.

Bake at 400 until lightly browned (about 15 minutes).

Garnish with sour cream or salsa as desired.
