I use my kitchenaid mixer for this, as this came with the mixer, the instructions are based on using it.
dissolve yeast into warm ( 105-110 degree) water in warmed mixer bowl. melt butter, milk, salt and sugar in separate saucepan over low heat until sugar dissolves then cool to lukewarm. Add to yeast and water along with 4.5 cups of flour. mix on speed 2 for about a minute then add flour a half cup at a time until dough forms a ball on the hook and cleans the sides of bowl. Do not exceed a total of 6 cups of flour. the dough should still be slightly sticky. allow to knead for 2 mins- or until it looks smooth and elastic. place in a greased bowl, and flip dough over to grease teh top. cover with a towel and allow to rise for 1 hour. when done rising, punch to deflate and either cut in half for normal 9' loaf pans or use whole amount for 12" pan. roll out with rolling pin until roughly 1 inch larger than both length and width of pan. roll long side tightly, pinching seam. then pinch both ends and tuck under before putting in pan. cover again with a towel and allow to rise until at least double in size- or 1 hour. bake in preheated 400 oven for 30 mins. remove from pan immediately and cool on rack. Makes approx 20 .5 inch slices.
