shrimp pasta pesto

Ingredients
Shrimp 30 large, tails offonion 1 large dicedfresh mushrooms 2 cups dicedfettucini noodles 250 grams drypesto sauce 1/4 cup
Directions
cook the shrimp until pink and opaqu, approximately 3 minutes, set aside. Sautee the onions, then add the mushrooms in the same pan as the shrimp were cooked. Add the shrimp back to the mix. Set aside covered to keep warm.
In the meantime in a large pasta pot boil water and salt and cook the pasta. Drain and add the shrimp mixture, add the pesto, toss and enjoy.

    I used frozen shrimp and jarred sauce so this was super easy. I added sugar snap peas for color (to sneak in a veg for my sons) and used bowtie pasta. Yummy! - 1/19/11
