Easy Chicken Enchiladas

1 chicken breast, cooked & shredded (or leftover chicken)1 cup frozen corn (or 1 can)1 cup low fat sour cream1 cup shredded cheddar or Mexican blend cheese6 flour tortillas, cut in half2 cup tomato sauce1 pkg Taco Seasoningred pepper flakes to tastecumin to taste
Preheat oven to 400 degrees. Lightly grease 13 x 9 baking dish.
Combine first 4 ingredients in large bowl. Set aside.
Combine last 4 ingredients in medium bowl. Set aside.
Spoon @ 1 tablespoon tomato sauce mixture on each half tortilla then add @ 1/3 cup chicken mixture and roll up tightly. Arrange seam side down and spread remaining sauce on top. Garnish with extra cheese if desired (not included in nutritional info). Cover with foil and bake 15 - 20 minutes until heated through.
Makes 6 servings - 2 enchiladas each
