Creamy Mashed Cauliflower

Ingredients
1 bag frozen cauliflower cooked tender1 oz FF cream cheese1 Tbsp unsalted butter1/2 tsp garlic powder1/2 tsp fresh ground black peppersea salt to taste
Directions
Boil cauliflower in water with a little salt until tender enough to mash. Drain and add all other ingredients and mash together like potatoes.

    Hubby requested emental cheese instead of cream cheese... sadly it didn't turn out as good as a cream cheese may have... the emental just made a big cheesy lump that was hard to mix with the cauliflower... next time definitely trying it with cream cheese!! :D - 9/30/12

    I tried this but wasn't thrilled with how mine turned out. Will have to play around with this recipe to see if I can make into something that will work more for my taste.
